Ingredients
- 1 cup butter softened
- ½ cup granulated sugar or powdered sugar
- 1 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup chocolate chips or chunks of chocolate or whatever filling you wish to add inside
- 2 cups powdered sugar for coating
Instructions
- Using a stand mixer, or a medium size mixing bowl and a handheld mixer on medium-high speed, beat the softened butter for 1 minute.
- Add the sugar and vanilla extract, and continue mixing for 1 minute.
- Add the flour and mix on low for 30 seconds to 1 minute, until the dry ingredients are well combined. Cover the cookie dough and chill in the refrigerator for 30 minutes.

- Preheat the oven to 375°F. Line 2 baking sheets with parchment paper or silicone mat.
- scoop out about 1 tbsp of the cookie dough.
- Using your hands, flatten the cookie dough ball to fit around the chocolate.

- Roll the cookie dough into a ball.

- Place the shaped dough 2 inches apart on the prepared baking sheet.
- Bake for 10 to 12 minutes.
- Allow the cookies to cool slightly, about 5 minutes
- Roll the warm cookies in powdered sugar.
