Using a stand mixer, or a medium size mixing bowl and a handheld mixer on medium-high speed, beat the softened butter for 1 minute.
Add the sugar and vanilla extract, and continue mixing for 1 minute.
Add the flour and mix on low for 30 seconds to 1 minute, until the dry ingredients are well combined. Cover the cookie dough and chill in the refrigerator for 30 minutes.
Preheat the oven to 375°F. Line 2 baking sheets with parchment paper or silicone mat.
scoop out about 1 tbsp of the cookie dough.
Using your hands, flatten the cookie dough ball to fit around the chocolate.
Roll the cookie dough into a ball.
Place the shaped dough 2 inches apart on the prepared baking sheet.
Bake for 10 to 12 minutes.
Allow the cookies to cool slightly, about 5 minutes
Roll the warm cookies in powdered sugar.
Once fully cooled, roll them again in powdered sugar for that perfect snowball effect.
