Snowball Surprise Cookies are a fun twist on classic snowball cookies! They have a buttery, melt-in-your-mouth texture and usually contain a hidden surprise in the center, like chocolate or caramel.

Ingredients
  

  • 1 cup butter softened
  • ½ cup granulated sugar or powdered sugar
  • 1 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup chocolate chips or chunks of chocolate or whatever filling you wish to add inside
  • 2 cups powdered sugar for coating

Instructions
 

  • Using a stand mixer, or a medium size mixing bowl and a handheld mixer on medium-high speed, beat the softened butter for 1 minute.
  • Add the sugar and vanilla extract, and continue mixing for 1 minute.
  • Add the flour and mix on low for 30 seconds to 1 minute, until the dry ingredients are well combined. Cover the cookie dough and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 375°F. Line 2 baking sheets with parchment paper or silicone mat.
  • scoop out about 1 tbsp of the cookie dough.
  • Using your hands, flatten the cookie dough ball to fit around the chocolate.
  • Roll the cookie dough into a ball.
  • Place the shaped dough 2 inches apart on the prepared baking sheet.
  • Bake for 10 to 12 minutes.
  • Allow the cookies to cool slightly, about 5 minutes
  • Roll the warm cookies in powdered sugar.
  • Once fully cooled, roll them again in powdered sugar for that perfect snowball effect.

Notes

Make sure your butter is softened, not melted, or it will affect the texture of your cookies, and they won’t hold their shape the way they should.
If you find your dough has warmed up too much while you were shaping your cookies, pop the tray in the fridge for about 10 minutes before baking; otherwise, the cookies may spread too much during baking.
These will keep in a sealed container for up to a week.
For a festive touch, add a pinch of cocoa powder or cinnamon to the powdered sugar for rolling.
Use different fillings to surprise guests (e.g., peanut butter chips, hazelnuts, or small truffles).
