Easy Vanilla Granola

Easy homemade vanilla granola with just a few simple ingredients. Nut free, gluten free, soy free, and no vegetable oils. Enjoy this as a quick snack, plain or with some dried fruit, mix it into yogurt, or just put some granola in a bowl with milk and enjoy it as cereal! You can use my homemade vanilla extract in this recipe.

Ingredients
  

  • 2 1/2 cup old fashion rolled oats
  • 1/2 ts ground cinnamon
  • 1/8 ts salt pinch
  • 1/4 cup coconut oil melted
  • 1/2 cup maple syrup
  • 1 tbsp vanilla extract

Instructions
 

  • Preheat oven to 300°. Line a baking sheet with parchment paper.
  • Mix together the oats, cinnamon, and salt in a bowl. Set aside.
  • Melt coconut oil in a pot. Remove from heat and stir in the maple syrup and vanilla. Pour over the oat mixture and toss to coat. Make sure all of the oats are coated.
  • Spread granola in an even layer on the baking sheet. Bake for 20 minutes, stir. Press down into an even layer and bake for 15 more minutes, until lightly golden. Let it cool completely, it will become crunchy as it cools.
  • Store in an airtight container at room temperature for up to 3 weeks.
