Ingredients
- 1 cup salsa
- 1 tbsp green chiles flakes
- 1 1/2 teaspoon garlic powder
- 1 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 3 cups shredded Mexican cheese Queso fresco/ Oaxaca
- 1 lb. pulled pork shredded
- 24 tortillas
- 1 cup Lard for frying
- 2 tbsp flour for paste
- 2 1/2 tbsp cold water for paste
Instructions
- In a large bowl, mix together all of the ingredients from salsa to pulled pork.
- Mix flour and cold water together to make a paste and set aside.
- To soften tortillas for easy rolling warm in the microwave. Fill and tightly roll tortillas, place some paste on the inside edge of the tortilla. The paste will dry and seal the taquitos. Place seam side down onto a large plate or tray and repeat the process. At this point the taquitos can be frozen for later use or dried right away.
- In a frying pan over medium heat, bring 1/4 cup of lard to a sizzle. Working in batches pan-fry until the tortillas are golden brown, about 2 to 3 minutes, making sure to turn the taquitos as they brown. Remove from oil and drain on a paper towel. Replace oil between batches.
