Homemade Tater Tots

Ingredients
  

  • 2 lbs. potatoes
  • 2 tbsp. flour
  • 1 tsp. salt Redmond real salt
  • Oil for frying lard is my favorite

Method
 

  1. Peel the potatoes, keep them whole or cut them in half. Place them in a pot with enough water to cover them.
  2. Parboil potatoes for 7 to 10 minutes.
  3. Allow to cool enough so you can handle them.
  4. Grate them on the big holes of your grater.
  5. Place them in a bowl.
  6. Add the flour and salt mix gently.
  7. Heat the oil up to 360F.
  8. Use about 2 teaspoons potato mixture for each tot.
  9. Shape the potato mixture gently until it is in the shape of a tater tot.
  10. Fry, a few at a time, in the hot oil just until they are golden brown.
  11. Drain on paper towels and season to taste.
